Sweet Potato Omelet

A unique Anglo-Indian dessert or breakfast dish transforming a standard potato omelet into a sweet treat with lemon, nutmeg, and sugar.

Ingredients

  • 500 grams Potatoes, starchy variety (Approximately 1 lb or 2 large potatoes)
  • 4 whole Eggs, large
  • 1 tablespoon Powdered sugar (Use a brimming/heaping tablespoon)
  • 1 lemon Lemon juice (Freshly squeezed juice of one lemon)
  • 0.5 whole nutmeg Nutmeg, grated (Freshly grated)
  • 2 tablespoons Butter or Ghee (For frying)

Instructions

  1. 1Boil the potatoes in water until fully tender. Drain and let cool slightly.
  2. 2Peel the boiled potatoes and mash them until very smooth and free of lumps.
  3. 3In a separate bowl, beat the eggs thoroughly. Add the powdered sugar, lemon juice, and grated nutmeg to the eggs and whisk to combine.
  4. 4Mix the egg and spice mixture into the mashed potatoes until well incorporated into a uniform batter.
  5. 5Heat the butter in a frying pan over medium heat. Pour in the potato mixture and spread evenly. Fry until the bottom is golden brown and the eggs are set. Flip carefully to brown the other side, or finish under a broiler if preferred.
