Sausage Rolls
Savory pastry rolls filled with seasoned meat, perfect for picnics, parties, or travel. These can be made with leftover roast meats and enjoyed hot or cold.
Ingredients
- 8 ounces Cold roast veal, finely chopped (Or substitute with cold roast chicken)
- 8 ounces Cold ham, finely chopped (Or substitute with cold tongue)
- 1 teaspoon Dried mixed herbs (thyme, sage, parsley) (Powdered or finely ground)
- 0.5 teaspoon Salt
- 0.5 teaspoon Cayenne pepper (Adjust to taste)
- 1.5 cups All-purpose flour (For pastry)
- 0.5 cup Semolina flour (soojee) (Fine semolina)
- 0.67 cup Beef suet, finely chopped or grated (Or substitute with cold butter)
- 0.5 teaspoon Salt (For pastry)
- 0.5 cup Cold water (Approximately, for dough)
Instructions
- 1Finely chop the cold roast veal and ham together until very small and well combined. Place in a mixing bowl.
- 2Add the dried herbs, salt, and cayenne pepper to the chopped meat. Mix thoroughly until all seasonings are evenly distributed throughout the meat.
- 3Finely chop or grate the beef suet. Shape it into a flat circular cake about 6 inches in diameter.
- 4In a large bowl, combine the all-purpose flour, semolina, and salt for pastry. Add cold water gradually and knead until a smooth dough forms. Divide the dough into two equal portions.
- 5Shape each portion of dough into a flat circular cake, each about 6 inches in diameter, the same size as the suet cake.
- 6Place the suet cake between the two flour dough cakes, creating a sandwich. Roll the three layers together into a single sheet. Fold the pastry in half, then in half again. Roll out again into a sheet about 1/4 inch thick.
- 7Preheat oven to 400°F (200°C).
- 8Cut the rolled pastry into rectangles approximately 4x5 inches. Place 3 tablespoons of the seasoned meat mixture in the center of each rectangle, shaping it into a log. Roll the pastry around the filling, sealing the edges by pressing with your fingers or a fork. Place seam-side down on a baking sheet.
- 9Place the baking sheet in the preheated oven and bake for 30 minutes, or until the pastry is golden brown and crispy.
- 10Remove from oven and let cool slightly on the baking sheet for 5 minutes before serving. These rolls can be enjoyed hot or cold and are excellent for picnics, parties, or travel.
