Lentil Porridge

A simple, restorative porridge made from lentil flour simmered in water and seasoned with salt and pepper. This dish serves as a light meal or a base for a heartier soup.

Ingredients

  • 6 tablespoons Lentil flour (such as gram flour/besan or ground red lentils) (Sifted to remove lumps)
  • 1 quart Water (Approximately 4 cups or 1 liter)
  • 1 teaspoon Salt (Adjust to taste)
  • 0.5 teaspoon Black pepper, ground (Adjust to taste)

Instructions

  1. 1In a small bowl, whisk the lentil flour with about 1 cup of the cold water until completely smooth and free of lumps.
  2. 2Pour the remaining 3 cups of water into a saucepan. Whisk in the lentil slurry. Place over medium-high heat and bring to a boil, stirring frequently to prevent the flour from settling or sticking to the bottom.
  3. 3Once boiling, reduce the heat to low. Let the porridge simmer gently for 15 minutes. Stir occasionally to ensure even cooking.
  4. 4Remove from heat. Season with salt and pepper to taste. Serve hot.
