Essence of Mushroom

A simple, concentrated mushroom stock made from trimmings or whole mushrooms. This essence provides a rich umami base for soups and sauces. Per the original text, avoid using large, dark-gilled mushrooms to maintain a lighter color and cleaner flavor.

Ingredients

  • 500 grams Mushroom trimmings or white button mushrooms (Use stems, stalks, and peelings, or chopped whole mushrooms. Avoid large black/dark-gilled mushrooms.)
  • 600 milliliters Water (Enough to just cover the mushrooms)
  • 0.5 tsp Salt (Optional, aids extraction)

Instructions

  1. 1Wash the mushroom trimmings or whole mushrooms thoroughly to remove any grit. If using whole mushrooms, chop them roughly.
  2. 2Place the mushrooms in a saucepan and add the water and salt. Bring to a gentle boil, then reduce heat to low. Cover and simmer gently to extract the flavor.
  3. 3Pour the mixture through a fine sieve or muslin cloth into a clean container. Press down on the mushroom solids with the back of a spoon to extract as much liquid as possible. Discard the solids.
