Essence of Mushroom
A simple, concentrated mushroom stock made from trimmings or whole mushrooms. This essence provides a rich umami base for soups and sauces. Per the original text, avoid using large, dark-gilled mushrooms to maintain a lighter color and cleaner flavor.
Ingredients
- 500 grams Mushroom trimmings or white button mushrooms (Use stems, stalks, and peelings, or chopped whole mushrooms. Avoid large black/dark-gilled mushrooms.)
- 600 milliliters Water (Enough to just cover the mushrooms)
- 0.5 tsp Salt (Optional, aids extraction)
Instructions
- 1Wash the mushroom trimmings or whole mushrooms thoroughly to remove any grit. If using whole mushrooms, chop them roughly.
- 2Place the mushrooms in a saucepan and add the water and salt. Bring to a gentle boil, then reduce heat to low. Cover and simmer gently to extract the flavor.
- 3Pour the mixture through a fine sieve or muslin cloth into a clean container. Press down on the mushroom solids with the back of a spoon to extract as much liquid as possible. Discard the solids.
