A classic technique for poaching eggs using a shallow pan and acidulated water to ensure a clean, white appearance and tender texture. The recipe emphasizes gentle handling and proper water temperature to create a delicate 'pillow-case' of white around the yolk.
Ingredients
- 4 large Fresh eggs (Fresh eggs hold their shape best)
- 1 liter Water (Enough to fill a large frying pan 1.5 to 2 inches deep)
- 1 tsp White vinegar or Lemon juice (Helps keep the egg whites white and firm)
- 4 slices Slices of bread, toasted (Optional, for serving)
- 1 cup Spinach, cooked (Optional, for serving)
Instructions
- 1Fill a large frying pan with water to a depth of about 1.5 to 2 inches. Add the vinegar or lemon juice. Bring the water to a gentle simmer; do not let it boil vigorously.
- 2Crack one egg carefully into a small cup or ramekin, ensuring the yolk remains intact.
- 3Gently slide the egg from the cup into the simmering water. Repeat with remaining eggs if the pan allows space without crowding. Let them cook undisturbed until the whites are set fairly firm but the yolk remains soft.
- 4Using a slotted spoon (egg-slice), carefully lift the eggs out of the water. Drain them thoroughly to remove any acidic water. If necessary, trim any ragged edges of the white with a knife to neaten the appearance.
- 5Place the drained eggs immediately onto toast or a bed of cooked spinach.
