Buns

Light, tender sweet buns made with butter and leavened with baking powder. These simple buns can be enjoyed plain or with currants or raisins added for variety.

Ingredients

  • 1 pound (about 3½ cups) All-purpose flour (Approximately 450g)
  • 6 ounces (¾ cup) Butter, softened (Approximately 170g)
  • 2 teaspoons Baking powder
  • 0.25 pound (½ cup) Granulated sugar (Approximately 115g)
  • 1 whole Egg, large
  • 0.25 pint (½ cup minus 2 tablespoons) Milk (Nearly a quarter pint, approximately 110ml)
  • 0.5 teaspoon Lemon extract (A few drops)
  • 0.5 cup Currants or raisins (Optional, for variety)

Instructions

  1. 1Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper or grease them lightly.
  2. 2In a large mixing bowl, combine the flour, baking powder, and sugar. Whisk together to distribute the baking powder evenly.
  3. 3Add the softened butter to the flour mixture. Using your fingertips or a pastry cutter, rub the butter into the flour until the mixture resembles coarse breadcrumbs.
  4. 4In a small bowl, beat the egg lightly with the milk and lemon extract. Pour this mixture into the flour mixture and stir gently with a wooden spoon until just combined. If using currants or raisins, fold them in now. Do not overmix; the dough should be soft and slightly sticky.
  5. 5Using two spoons or a small ice cream scoop, drop heaping tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. You should get approximately 24 buns. The dough will be soft and sticky; do not try to shape them perfectly.
  6. 6Place the baking sheets in the preheated oven and bake for 12-15 minutes, until the buns are golden brown on top and a toothpick inserted into the center comes out clean.
  7. 7Remove the buns from the oven and transfer to a wire rack to cool slightly. Serve warm or at room temperature.
