TOM AND JERRY

This classic winter warmer is a traditional holiday cocktail featuring a rich, fluffy batter made from separated eggs and sugar. The creamy, spiced mixture is fortified with equal parts rum and brandy, then topped with hot water to create a frothy, comforting drink reminiscent of hot eggnog. Finished with freshly grated nutmeg, it offers a festive aroma and a warming depth of flavor perfect for cold evenings.

Ingredients

  • 6 count Eggs (separated) (Quantity estimated for a standard batch. Contains raw eggs; use pasteurized eggs if concerned about food safety.)
  • 1 cup Superfine sugar (Bar sugar) (Quantity estimated. Originally 'Bar Sugar'.)
  • 4 1/2 ounces Dark Rum (Calculated for 6 servings (0.75 oz per drink). Originally '1/2 jigger' per serving.)
  • 4 1/2 ounces Brandy (Calculated for 6 servings (0.75 oz per drink). Originally '1/2 jigger' per serving.)
  • 4 cups Hot water (Quantity estimated for filling mugs. Use boiling water.)
  • 1 piece Whole Nutmeg (For grating on top.)

Instructions

  1. 1Separate the yolks from the whites of the eggs. Beat the egg whites in a clean bowl until they form a stiff froth.
  2. 2In a separate bowl, stir or beat the egg yolks until they are very thin and pale. Mix the yolks together with the stiff egg whites in a Tom and Jerry bowl (or large mixing bowl). Slowly stir in the sugar until the batter becomes stiff.
  3. 3To serve, fill a mug 1/4 full with the prepared batter. Add 3/4 ounce (1/2 jigger) of Rum and 3/4 ounce (1/2 jigger) of Brandy to the mug.
  4. 4Stir the mixture well with a bar spoon. Fill the mug to the top with hot water and stir again. Grate fresh nutmeg on top and serve immediately.
