Ingredients

  • 1 1/2 ounces Old Tom Gin (Originally '1 jigger'. Converted to modern standard (1.5 oz). Old Tom Gin is slightly sweeter than London Dry.)
  • 1/2 ounce Lemon juice (Originally '1/2 pony'. Converted to modern measurement (1 pony ≈ 1 oz).)
  • 1/2 ounce Orange juice (Originally '1/2 pony'. Converted to modern measurement (1 pony ≈ 1 oz).)
  • 2 dashes Rock candy syrup (or rich simple syrup) (Rock candy syrup is a supersaturated sugar syrup. Can substitute with rich simple syrup (2:1 sugar to water).)
  • 1 cup Fine ice (crushed ice) (Quantity estimated for filling a tall glass.)

Instructions

  1. 1Fill a tall, thin glass (such as a Collins or Highball glass) completely with fine or crushed ice.
  2. 2Pour the lemon juice, orange juice, rock candy syrup, and Old Tom Gin directly over the ice in the glass.
  3. 3Stir the mixture well with a bar spoon to chill and combine the ingredients. Serve immediately with the ice remaining in the glass.
