REMSEN COOLER
This refreshing highball cocktail features a unique presentation where a whole lemon peel is spiraled inside the glass, infusing the drink with bright, aromatic citrus oils. A generous pour of Scotch whisky provides a smoky, robust foundation that is perfectly lightened by the effervescence of crisp club soda. Served over ice, the Remsen Cooler is a sophisticated and visually striking alternative to the standard Scotch and soda, perfect for a warm afternoon.
Ingredients
- 1 whole Lemon (peel only) (Peel the entire lemon in a continuous spiral, similar to peeling an apple.)
- 3 cubes Ice cubes (Originally '2 or 3 lumps of Crystal Ice'.)
- 2 ounces Scotch Whiskey (Originally '1 Wineglass of Remsen Scotch Whiskey'. Converted to modern standard (approx. 2 oz).)
- 4 ounces Club soda (Quantity estimated to fill the glass.)
Instructions
- 1Using a vegetable peeler or sharp knife, peel the lemon in one long, continuous spiral strip (as you would peel an apple). Place the entire rind spiral into a medium-sized highball or fizz glass.
- 2Add the ice cubes to the glass with the lemon peel. Pour in the Scotch Whiskey.
- 3Fill the remainder of the glass with club soda. Stir slowly with a bar spoon to combine the ingredients without losing carbonation, and serve immediately.
