PEQUOT SEMER
This refreshing historical highball from 1917 masterfully blends the botanical sweetness of Old Tom Gin with a vibrant trio of citrus juices. Fresh mint sprigs are muddled directly into the glass to release their aromatic oils, complementing the tart lime, sweet pineapple, and orange flavors. Finished with a splash of grenadine and topped with effervescent seltzer, the Pequot Semer is a crisp, cooling cocktail with a beautiful balance of sweet and tart notes.
Ingredients
- 1 ounce Lime juice (Freshly squeezed (approx. juice of 1 lime).)
- 3 sprigs Fresh mint
- 1 dash Grenadine (Originally specified as 'Cusinier Grenadine'.)
- 1/2 ounce Pineapple juice (Originally '1/2 pony'. Converted to modern measurement (1 pony = 1 oz).)
- 1/2 ounce Orange juice (Originally '1/2 pony'. Converted to modern measurement (1 pony = 1 oz).)
- 1 1/2 ounces Old Tom Gin (Originally '1 jigger of Sir Robert Burnette's Old Tom Gin'. Converted to modern measurement (1 jigger = 1.5 oz).)
- 1 cup Ice (Lump or cubed ice, quantity estimated for filling glass.)
- 3 ounces Seltzer water (Or club soda, to top. Quantity estimated based on glass size.)
Instructions
- 1In a tall, thin bar glass (Collins or Highball glass), combine the lime juice, fresh mint sprigs, grenadine, pineapple juice, orange juice, and Old Tom Gin.
- 2Gently crush (muddle) the ingredients together to release the mint oils. Fill the glass with lump ice.
- 3Top the glass with seltzer water. Stir well to combine and chill the drink before serving.
