This classic pre-Prohibition cocktail combines the robust, fruity warmth of apple brandy with the delicate sweetness of raspberry and gum syrups. Ingredients
- 1 cup Shaved ice (Quantity estimated to fill a large bar glass 3/4 full.)
- 3 dashes Gum syrup (Gomme syrup provides a silky texture. Can substitute with rich simple syrup (2:1 sugar to water).)
- 3 dashes Raspberry syrup
- 2 ounces Applejack (or Apple Brandy) (Originally '1 1/4 jiggers' (approx 1.875 oz). Rounded to 2 ounces for modern measurement.)
- 1 piece Lemon peel (For garnish.)
Instructions
- 1Fill a large bar glass or cocktail shaker about 3/4 full with shaved or crushed ice.
- 2Add the gum syrup, raspberry syrup, and applejack to the ice in the shaker.
- 3Shake vigorously until well chilled. Strain into a chilled cocktail glass and serve with a piece of lemon peel twisted over the top to release its oils.
