This visually stunning layered cocktail from 1917 stacks distinct bands of colorful liqueurs in a tall, narrow glass for a sophisticated presentation. The drink combines the herbal complexity of Chartreuse with sweet Maraschino, vibrant Curaçao, and a warming Brandy finish. A dramatic digestif, it features a traditional flaming technique where the top layer is briefly ignited before being extinguished and served.
Ingredients
- 1/2 ounce Chartreuse (Green or Yellow) (Quantity estimated for a standard 2-ounce Pousse Cafe glass (1/4 of glass).)
- 1/2 ounce Maraschino liqueur (Quantity estimated (1/4 of glass).)
- 1/2 ounce Curaçao (Orange liqueur) (Quantity estimated (1/4 of glass). Originally spelled 'Curacoa'.)
- 1/2 ounce Brandy (Quantity estimated (1/4 of glass).)
Instructions
- 1Carefully pour the Chartreuse into a Pousse Cafe glass (a tall, narrow cordial glass) until it is one-quarter full.
- 2Using a bar spoon held against the inside of the glass (or pouring very gently from a small wine glass), slowly layer the Maraschino, Curaçao, and Brandy in equal proportions on top of the Chartreuse. Pour with great care to prevent the colors from blending, creating distinct layers until the glass is filled.
- 3Carefully ignite the Brandy on the top layer. Allow it to blaze for a few seconds for presentation. Extinguish the flame by placing a saucer or the bottom of another glass over the rim to cut off the oxygen. Serve immediately once extinguished. CAUTION: Use extreme care when handling flaming alcohol; ensure the glass is heat-safe and do not attempt to drink while flaming.
