ABSINTHE, FRENCH SERVICE
This elegant French Service method for Absinthe transforms the potent green spirit into a mesmerizing, opalescent cocktail through the traditional 'louche' ritual. By slowly dripping ice-cold water into the absinthe, the essential oils of anise and wormwood are released, creating a rich, creamy texture and a complex, aromatic flavor profile. A classic and sophisticated way to enjoy this historical spirit, perfect for a slow, contemplative sip.
Ingredients
- 1 ounce Absinthe (Originally '1 pony'. Converted to modern measurement (1 pony = 1 fluid ounce).)
- 1/2 cup Shaved ice (Quantity estimated. Used to chill the water for the drip.)
- 3 ounces Cold water (Quantity estimated. The traditional ratio is 3 to 5 parts water to 1 part absinthe.)
Instructions
- 1Pour the Absinthe into a Champagne glass or specialized Absinthe glass.
- 2Prepare a separate vessel (or 'bowl' as described in the original text) filled with the shaved ice and water. This creates the ice-cold water needed for the drip.
- 3Slowly drip the ice water from your vessel into the Absinthe. Continue dripping steadily until the liquid transforms from clear green to a milky, opalescent white (the 'louche') and the proper diluted color is obtained.
- 4Serve immediately in a thin bar glass.
