This classic American-style Absinthe cocktail offers a refreshing and sophisticated way to enjoy the distinct anise-flavored spirit. By shaking the absinthe with gum syrup and shaved ice, the drink develops a delightful frosted texture and a slightly sweeter, smoother profile than the traditional drip method. Served in an elegant champagne glass, it makes for a visually stunning and aromatic aperitif perfect for vintage cocktail enthusiasts.
Ingredients
- 1 cup Shaved ice (Quantity estimated to fill mixing glass 3/4 full.)
- 4 dashes Gum syrup (or rich simple syrup) (Gum syrup (gomme syrup) adds a silky texture. Can substitute with simple syrup.)
- 1 ounce Absinthe (Originally '1 pony'. Converted to modern measurement (1 pony ≈ 1 fluid ounce).)
Instructions
- 1Fill a mixing glass approximately 3/4 full with shaved ice.
- 2Add 4 dashes of gum syrup and 1 ounce of Absinthe to the ice.
- 3Shake the mixture vigorously until the outside of the shaker is well frosted and cold to the touch.
- 4Strain the cocktail into a large Champagne glass (coupe) and serve immediately.
