The slow drip of ice-cold water into the emerald liquid creates the famous "louche," transforming the drink into an opalescent, milky-white elixir while awakening its aromatic anise and herbal notes. Ingredients
- 1 ounce Absinthe (Originally "one pony". Converted to modern measurement (1 pony = 1 fluid ounce).)
- 1/2 cup Shaved ice (Quantity estimated for filling the dripper/chilling the water.)
- 4 ounces Cold water (Quantity estimated to fill a standard bar glass after dilution.)
Instructions
- 1Pour the Absinthe into a large bar glass or goblet.
- 2Set up an Absinthe dripper (brouilleur) or fountain over the glass. If using the traditional method described, place the specialized top vessel (Absinthe glass with a hole in the center) over the bar glass. Fill this upper vessel partly with shaved ice.
- 3Pour water into the upper vessel containing the ice. Allow the ice-cold water to slowly drip through the hole into the Absinthe below. Continue until the bar glass is full and the mixture has turned cloudy (louched). Serve immediately.
