ABRICONTINE POUSSE CAFE
This elegant 1917 layered cocktail showcases a stunning visual spectrum of distinct liqueurs, starting with a sweet base of apricot liqueur. Carefully stacked layers of Maraschino, Curaçao, and herbal Chartreuse create a sophisticated flavor journey that culminates in a dramatic finish. The final layer of brandy is ignited for a spectacular presentation before being extinguished and enjoyed as a rich, warming digestif.
Ingredients
- 1/2 ounce Apricot liqueur (Abricotine) (Originally 'Abricontine'. Quantity estimated to fill one-third of a standard 1.5 oz Pousse Cafe glass.)
- 1/4 ounce Maraschino liqueur (Quantity estimated to form an equal layer.)
- 1/4 ounce Orange Curaçao (Originally 'Curacoa'. Quantity estimated to form an equal layer.)
- 1/4 ounce Green Chartreuse (Originally 'Chartreuse'. Green is recommended for color contrast. Quantity estimated to form an equal layer.)
- 1/4 ounce Brandy (Quantity estimated to fill the glass. High proof brandy works best for ignition.)
Instructions
- 1Pour the Apricot liqueur (Abricotine) into a Pousse Cafe glass (or a tall, narrow shot glass) until it is approximately one-third full.
- 2Carefully layer the remaining ingredients in the following order: Maraschino liqueur, Orange Curaçao, Green Chartreuse, and finally Brandy. To prevent the colors from blending, pour each ingredient slowly over the back of a bar spoon touching the inside of the glass, allowing the liquid to trickle down gently on top of the previous layer.
- 3Using a long match or lighter, carefully ignite the top layer of Brandy. Allow it to blaze for a few seconds for presentation. Extinguish the flame by placing a saucer or the bottom of another glass firmly over the top of the Pousse Cafe glass to cut off the oxygen. Serve immediately once extinguished. CAUTION: Do not attempt to drink while flaming.
