A Trifle

Ingredients
- 6 cakes Sponge cakes (Plain sponge finger cakes or a small sponge cake cut into quarters; enough to cover the base of your serving dish in a single layer.)
- 1 handful Ratafia cakes or broken macaroons (Ratafia cakes are small almond-flavoured biscuits, similar to amaretti. If unavailable, broken macaroon biscuits work well.)
- 1 small glass (approx. 100 ml) Sweet white wine (Use a dessert wine such as Sauternes, Muscat, or a sweet sherry. Use just enough to moisten the cakes without making them soggy.)
- 4 tablespoons Raspberry jam (or any other jam of your choice) (Spread generously over the soaked cake layer. Any good-quality fruit jam works here.)
- 2 tablespoons Guava jelly (Spoon over the jam layer alongside the raspberry jam. Guava jelly adds a floral, tropical sweetness.)
- 500 ml Rich custard (Use a thick, ready-made fresh custard or homemade egg custard. It should be cooled before pouring over the trifle.)
- 300 ml Whipped cream (Use double (heavy) cream and whip until it forms soft, billowing peaks. Pile it high over the custard layer.)
- 1 small handful Comfits or coloured sweetmeats (Comfits are sugar-coated seeds or nuts. Modern equivalents include hundreds and thousands, sugar-coated almonds, or decorative sugar pearls.)
Instructions
- 1Choose a large, deep glass serving dish or trifle bowl so the layers are visible from the side. Take your sponge cakes and divide them into quarters by cutting or tearing them. Lay the pieces across the bottom of the dish in an even layer, pressing them gently to fill any gaps. The pieces can overlap slightly — you want full coverage of the base.
- 2Scatter a handful of ratafia cakes or broken macaroons evenly over the sponge cake layer. If using macaroons, break them into rough pieces with your hands first. These add a pleasant almond flavour and a slightly chewier texture to the base.
- 3Slowly drizzle a small glass (about 100 ml) of sweet white wine evenly over the sponge and ratafia cakes. Pour it gradually so it soaks in rather than pooling. The cakes should be moist and flavourful but not swimming in liquid — you want them softened, not waterlogged. Allow the wine to absorb for a minute before moving on.
- 4Spoon 4 tablespoons of raspberry jam (or your chosen jam) over the soaked cake layer and spread it gently with the back of a spoon to cover as evenly as possible. Then spoon 2 tablespoons of guava jelly on top, dotting it across the jam layer. The guava jelly adds a floral sweetness that complements the fruit jam beautifully. You do not need to mix them together — simply layer them.
- 5Ensure your custard is at room temperature or cooled — do not pour hot custard as it may cause the cream layer to separate later. Slowly pour 500 ml of rich custard over the jam layer, covering it completely. Tilt the dish gently side to side to help the custard settle into an even layer. If the custard is very thick, use the back of a spoon to spread it. Once poured, allow it to settle for a moment.
- 6Pour 300 ml of cold double (heavy) cream into a clean mixing bowl. Using a hand whisk or electric beaters, whip the cream until it forms soft, billowing peaks — it should hold its shape but still look light and airy, not stiff or grainy. Spoon the whipped cream generously over the custard layer, piling it up high in the centre to create a domed, impressive finish. The higher the cream, the more dramatic the presentation.
- 7Scatter a small handful of comfits or coloured sweetmeats decoratively over the top of the whipped cream. Comfits are sugar-coated seeds or nuts; modern equivalents include hundreds and thousands, coloured sugar pearls, or sugar-coated almonds. Distribute them evenly for a festive, eye-catching finish. The trifle is now ready to serve, or can be refrigerated for a short time until needed.
