Whole Wheat Pastry Fingers
A simple whole wheat pastry, cut into finger shapes, brushed with egg white, and topped with chopped nuts. Serve with salad.
Ingredients
- 1 cup Whole Wheat Flour (Fine ground)
- 0.5 cup Pastry Flour
- 1 teaspoon Salt
- 3 tablespoons Lard
- 0.5 cup Butter (Cold, unsalted)
- 0.25 cup Cold Water (Add gradually until dough forms)
- 1 large Egg White (Slightly beaten)
- 1 teaspoon Cold Water (For egg wash)
- 0.5 cup Chopped Nuts (Walnuts, pecans, or almonds)
- 0.125 teaspoon Salt (For nuts)
Instructions
- 1In a large bowl, whisk together the whole wheat flour, pastry flour, and salt.
- 2Cut in the lard and butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- 3Gradually add cold water, mixing until the dough just comes together. Do not overmix.
- 4On a lightly floured surface, roll the dough to about one-fourth inch in thickness.
- 5Cut the dough into finger-shaped pieces.
- 6Place the finger-shaped pieces on a baking sheet and bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until lightly golden.
- 7Remove from oven and let cool slightly.
- 8In a small bowl, whisk together the slightly beaten egg white and cold water.
- 9Brush the pastry fingers with the egg white mixture and sprinkle with chopped nut meat seasoned with salt.
- 10Return to the oven and bake for another 5 minutes, or until the nut meats are slightly browned.
- 11Serve with a salad course.
