Walnut Fudge

A classic walnut fudge recipe, modernized for ease and clarity. This recipe creates a rich, sweet treat with a satisfying crunch.

Ingredients

  • 1 cup Walnut meats, broken in pieces
  • 2 teaspoons Vanilla extract
  • 4 tablespoons Unsalted butter
  • 1 4 cup Whole milk
  • 1 cup Granulated sugar
  • 1 4 cup Molasses
  • 2 ounces Unsweetened chocolate, chopped

Instructions

  1. 1Lightly butter an 8x8 inch pan. Set aside.
  2. 2In a medium saucepan over medium heat, melt the butter. Add the milk, sugar, and molasses. Stir to combine.
  3. 3Bring the mixture to a boil, stirring constantly. Once boiling, add the chopped chocolate. Cook until the mixture reaches the soft-ball stage (235-240°F or 113-116°C), stirring occasionally to prevent sticking. This will take approximately 10-15 minutes. Test by dropping a small amount into cold water; it should form a soft ball.
  4. 4Remove the saucepan from the heat. Beat the mixture for 3 minutes, until it thickens slightly.
  5. 5Stir in the walnut meats and vanilla extract until evenly distributed.
  6. 6Pour the fudge mixture into the prepared pan. Let it cool completely at room temperature, about 2 hours.
  7. 7Once the fudge is firm, cut it into squares. Wrap each square in parchment paper or wax paper for storage.
