Walnut Fudge
A classic walnut fudge recipe, modernized for ease and clarity. This recipe creates a rich, sweet treat with a satisfying crunch.
Ingredients
- 1 cup Walnut meats, broken in pieces
- 2 teaspoons Vanilla extract
- 4 tablespoons Unsalted butter
- 1 4 cup Whole milk
- 1 cup Granulated sugar
- 1 4 cup Molasses
- 2 ounces Unsweetened chocolate, chopped
Instructions
- 1Lightly butter an 8x8 inch pan. Set aside.
- 2In a medium saucepan over medium heat, melt the butter. Add the milk, sugar, and molasses. Stir to combine.
- 3Bring the mixture to a boil, stirring constantly. Once boiling, add the chopped chocolate. Cook until the mixture reaches the soft-ball stage (235-240°F or 113-116°C), stirring occasionally to prevent sticking. This will take approximately 10-15 minutes. Test by dropping a small amount into cold water; it should form a soft ball.
- 4Remove the saucepan from the heat. Beat the mixture for 3 minutes, until it thickens slightly.
- 5Stir in the walnut meats and vanilla extract until evenly distributed.
- 6Pour the fudge mixture into the prepared pan. Let it cool completely at room temperature, about 2 hours.
- 7Once the fudge is firm, cut it into squares. Wrap each square in parchment paper or wax paper for storage.
