Walnut Birthday Cake
A classic birthday cake with walnuts and confectioners' frosting, flavored with orange extract, vanilla, and sherry.
Ingredients
- 0.75 cup Walnut meats, broken in pieces
- 0.5 cup Butter, softened
- 1.25 cups Brown sugar, packed
- 2 Egg yolks
- 0.66 cup Milk
- 2.25 cups All-purpose flour
- 3.5 teaspoons Baking powder
- 1 teaspoon Orange extract
- 1 teaspoon Vanilla extract
- 2 tablespoons Sherry
- 2 cups Powdered sugar (For frosting)
- 0.25 cup Heavy cream (For frosting)
- 0.5 teaspoon Vanilla extract (For frosting)
Instructions
- 1Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- 2In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
- 3Beat in the egg yolks one at a time, then stir in the orange extract, vanilla extract, and sherry.
- 4In a separate bowl, whisk together the flour and baking powder.
- 5Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Beat until just combined.
- 6Gently fold in the broken walnut pieces.
- 7Pour the batter into the prepared cake pan and spread evenly. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- 8Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- 9In a medium bowl, whisk together the powdered sugar, heavy cream, and vanilla extract until smooth and creamy. Add more cream if needed to reach desired consistency.
- 10Once the cake is completely cool, spread the confectioners' frosting evenly over the top.
