Walnut Birthday Cake

A classic birthday cake with walnuts and confectioners' frosting, flavored with orange extract, vanilla, and sherry.

Ingredients

  • 0.75 cup Walnut meats, broken in pieces
  • 0.5 cup Butter, softened
  • 1.25 cups Brown sugar, packed
  • 2 Egg yolks
  • 0.66 cup Milk
  • 2.25 cups All-purpose flour
  • 3.5 teaspoons Baking powder
  • 1 teaspoon Orange extract
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Sherry
  • 2 cups Powdered sugar (For frosting)
  • 0.25 cup Heavy cream (For frosting)
  • 0.5 teaspoon Vanilla extract (For frosting)

Instructions

  1. 1Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. 2In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. 3Beat in the egg yolks one at a time, then stir in the orange extract, vanilla extract, and sherry.
  4. 4In a separate bowl, whisk together the flour and baking powder.
  5. 5Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Beat until just combined.
  6. 6Gently fold in the broken walnut pieces.
  7. 7Pour the batter into the prepared cake pan and spread evenly. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. 8Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  9. 9In a medium bowl, whisk together the powdered sugar, heavy cream, and vanilla extract until smooth and creamy. Add more cream if needed to reach desired consistency.
  10. 10Once the cake is completely cool, spread the confectioners' frosting evenly over the top.
