Waffles with Boiled Cider Syrup
A classic waffle recipe served with a homemade boiled cider syrup. The syrup is made by reducing apple cider to a thick, sweet consistency.
Ingredients
- 2 cups All-purpose flour
- 2 tablespoons Granulated sugar
- 4 teaspoons Baking powder
- 0.5 teaspoon Salt
- 2 Eggs
- 1.75 cups Milk
- 0.5 cup Unsalted butter, melted
- 1 teaspoon Vanilla extract
- 4 cups Apple cider
- 2 cups Granulated sugar
Instructions
- 1In a medium saucepan, combine the apple cider and sugar. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until the mixture has reduced to a syrup consistency, about 15-20 minutes. Stir occasionally to prevent sticking. The syrup is ready when it coats the back of a spoon.
- 2In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- 3Preheat your waffle iron according to the manufacturer's instructions. Once hot, lightly grease the waffle iron with cooking spray or melted butter. Pour the batter onto the hot waffle iron, using the amount recommended by the manufacturer. Cook until the waffles are golden brown and crisp, usually 3-5 minutes per waffle.
- 4Serve the waffles immediately with the boiled cider syrup. You can also add fresh fruit, whipped cream, or other toppings as desired.
