Vinegar Candy

A simple, old-fashioned hard candy made with vinegar, sugar, and butter. This recipe modernizes the original for easier preparation and a more consistent result.

Ingredients

  • 2 cups Granulated Sugar
  • 0.5 cup White Vinegar
  • 2 tablespoons Unsalted Butter

Instructions

  1. 1In a medium-sized, heavy-bottomed saucepan, melt the butter over medium heat.
  2. 2Add the sugar and vinegar to the melted butter. Stir constantly over medium heat until the sugar is completely dissolved. This will take about 5-7 minutes.
  3. 3Once the sugar is dissolved, stop stirring and let the mixture boil. Use a candy thermometer to monitor the temperature. Cook until the mixture reaches the hard-crack stage (300-310°F or 149-154°C). This will take approximately 10-15 minutes. Be careful, as the mixture will be very hot.
  4. 4Immediately pour the hot candy mixture onto a buttered platter or a silicone baking mat. Let it cool completely without disturbing it. This will take about 10-15 minutes.
  5. 5Once the candy is cool and hardened, break it into pieces or cut it with oiled scissors or a knife. Store in an airtight container.
