Velvet Molasses Candy

A smooth and rich molasses candy, enhanced with a touch of tartness for a balanced flavor.

Ingredients

  • 1 cup Molasses
  • 3 cups Granulated Sugar
  • 0.25 teaspoon Tartaric Acid (Adds a subtle tartness to balance the sweetness.)
  • 0.25 cup Water (For dissolving the tartaric acid.)
  • 1 tablespoon Butter (Adds richness and smoothness.)

Instructions

  1. 1In a small bowl, dissolve the tartaric acid in 1/4 cup of water. Stir until completely dissolved.
  2. 2In a heavy-bottomed saucepan, combine the molasses and sugar. Stir to combine.
  3. 3Place the saucepan over medium heat and cook, stirring constantly, until the sugar is completely dissolved and the mixture comes to a boil. Continue to cook, without stirring, until the mixture reaches the hard-crack stage (300-310°F or 149-154°C) on a candy thermometer. This will take approximately 15-20 minutes.
  4. 4Remove the saucepan from the heat and stir in the tartaric acid solution and butter. Stir until the butter is melted and everything is well combined.
  5. 5Pour the candy mixture onto a lightly buttered baking sheet or silicone mat. Let it cool completely. Once cooled, break or cut the candy into pieces.
