Velvet Molasses Candy
A smooth and rich molasses candy, enhanced with a touch of tartness for a balanced flavor.
Ingredients
- 1 cup Molasses
- 3 cups Granulated Sugar
- 0.25 teaspoon Tartaric Acid (Adds a subtle tartness to balance the sweetness.)
- 0.25 cup Water (For dissolving the tartaric acid.)
- 1 tablespoon Butter (Adds richness and smoothness.)
Instructions
- 1In a small bowl, dissolve the tartaric acid in 1/4 cup of water. Stir until completely dissolved.
- 2In a heavy-bottomed saucepan, combine the molasses and sugar. Stir to combine.
- 3Place the saucepan over medium heat and cook, stirring constantly, until the sugar is completely dissolved and the mixture comes to a boil. Continue to cook, without stirring, until the mixture reaches the hard-crack stage (300-310°F or 149-154°C) on a candy thermometer. This will take approximately 15-20 minutes.
- 4Remove the saucepan from the heat and stir in the tartaric acid solution and butter. Stir until the butter is melted and everything is well combined.
- 5Pour the candy mixture onto a lightly buttered baking sheet or silicone mat. Let it cool completely. Once cooled, break or cut the candy into pieces.
