Veal Chops Bavarian
Breaded and fried veal chops served with macaroni and a creamy Soubise sauce.
Ingredients
- 6 Veal loin chops (About 1 inch thick)
- 0.5 Onion (Medium, roughly chopped)
- 8 slices Carrots (About 1/4 inch thick)
- 2 Celery stalks (Roughly chopped)
- 0.5 teaspoon Peppercorns (Whole)
- 4 Cloves (Whole)
- 2 tablespoons Butter (Unsalted)
- 4 cups Boiling water (Approximately)
- 1 teaspoon Salt (Or to taste)
- 0.5 teaspoon Black pepper (Freshly ground, or to taste)
- 0.5 cup All-purpose flour (For dredging)
- 2 Eggs (Beaten)
- 1 cup Breadcrumbs (Plain or seasoned)
- 3 cups Vegetable oil (For deep frying)
- 1 cup Elbow macaroni (Dry)
- 4 tablespoons Butter (For Soubise Sauce)
- 2 Onions
- 4 tablespoons Flour (For Soubise Sauce)
- 2 cups Milk (For Soubise Sauce)
- 0.25 teaspoon Salt (For Soubise Sauce, or to taste)
- 0.125 teaspoon White pepper (For Soubise Sauce, or to taste)
Instructions
- 1Wipe the veal chops clean with a paper towel.
- 2In a large stewpan or Dutch oven, combine the veal chops, onion, carrots, celery, peppercorns, cloves, and butter. Cover with boiling water. Bring to a simmer, then reduce heat and cook until the veal is tender, about 30-45 minutes.
- 3Drain the veal chops and discard the vegetables and spices. Season the chops with salt and pepper. Dip each chop in flour, then in beaten egg, and finally in breadcrumbs, making sure they are fully coated. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the chops in the hot oil until golden brown and cooked through, about 3-5 minutes per side. Drain on paper towels.
- 4Cook the macaroni according to package directions until al dente. Drain well.
- 5Melt butter in a saucepan over medium heat. Add the finely chopped onions and cook until softened and translucent, about 5-7 minutes. Stir in the flour and cook for 1-2 minutes, creating a roux. Gradually whisk in the milk, stirring constantly to prevent lumps. Bring to a simmer and cook until the sauce has thickened, about 5-10 minutes. Season with salt and white pepper to taste. Strain the sauce through a fine-mesh sieve for a smoother texture (optional).
- 6Arrange the fried veal chops on a hot serving dish. Toss the cooked macaroni with the Soubise sauce and surround the chops with the macaroni mixture. Serve immediately.
