Turkey Soup
A simple and comforting turkey soup made from leftover turkey carcass. Perfect for using up Thanksgiving or Christmas leftovers.
Ingredients
- 1 Turkey carcass (From a roasted turkey, with any leftover meat attached)
- 12 cups Water (Or enough to cover the carcass)
- 2 Celery stalks (Outer stalks, roughly chopped)
- 1 tsp Salt (Or to taste)
- 0.5 tsp Black pepper (Freshly ground, or to taste)
- 1 medium Onion (Optional, for added flavor)
- 1 medium Carrot (Optional, for added flavor)
Instructions
- 1Break the turkey carcass into pieces, removing any stuffing. Place the carcass and any bits of leftover meat into a large stockpot or kettle.
- 2Cover the turkey carcass with cold water. Add the celery stalks, onion, and carrot (if using). Bring the water slowly to a boiling point, then reduce the heat to low and simmer for 2 hours.
- 3Strain the soup through a fine-mesh sieve or cheesecloth-lined colander to remove the solids. Return the broth to the pot. Skim off any fat from the surface. Season with salt and pepper to taste.
- 4Serve the turkey soup hot. You can add cooked noodles, rice, or diced vegetables to the soup before serving, if desired.
