Turkey Soup

A simple and comforting turkey soup made from leftover turkey carcass. Perfect for using up Thanksgiving or Christmas leftovers.

Ingredients

  • 1 Turkey carcass (From a roasted turkey, with any leftover meat attached)
  • 12 cups Water (Or enough to cover the carcass)
  • 2 Celery stalks (Outer stalks, roughly chopped)
  • 1 tsp Salt (Or to taste)
  • 0.5 tsp Black pepper (Freshly ground, or to taste)
  • 1 medium Onion (Optional, for added flavor)
  • 1 medium Carrot (Optional, for added flavor)

Instructions

  1. 1Break the turkey carcass into pieces, removing any stuffing. Place the carcass and any bits of leftover meat into a large stockpot or kettle.
  2. 2Cover the turkey carcass with cold water. Add the celery stalks, onion, and carrot (if using). Bring the water slowly to a boiling point, then reduce the heat to low and simmer for 2 hours.
  3. 3Strain the soup through a fine-mesh sieve or cheesecloth-lined colander to remove the solids. Return the broth to the pot. Skim off any fat from the surface. Season with salt and pepper to taste.
  4. 4Serve the turkey soup hot. You can add cooked noodles, rice, or diced vegetables to the soup before serving, if desired.
