Tomato Salad with Hard-Boiled Egg Yolk Dressing
A simple tomato salad elevated with a rich and tangy dressing made from hard-boiled egg yolk, butter, and vinegar.
Ingredients
- 2 medium Tomatoes (Ripe tomatoes)
- 1 pinch Salt (To taste)
- 1 pinch Black pepper (Freshly ground, to taste)
- 1 tablespoon All-purpose flour (For dredging)
- 2 tablespoons Butter (For sautéing tomatoes)
- 1 Egg (For hard-boiling and dressing)
- 2 tablespoons Butter (For the dressing)
- 2 tablespoons Vinegar (White vinegar or cider vinegar)
Instructions
- 1Place the egg in a saucepan and cover with cold water. Bring to a boil, then reduce heat and simmer for 10 minutes. Remove from heat and let cool slightly before peeling.
- 2Wipe, peel (optional), and cut the tomatoes into slices. Sprinkle with salt and pepper.
- 3Dredge the tomato slices with flour. Heat butter in a skillet over medium heat. Sauté the tomatoes until lightly browned, about 3-5 minutes per side.
- 4Separate the yolk from the hard-boiled egg. In a heatproof bowl, cream together the butter and the hard-boiled egg yolk, rubbing the yolk to a paste. Add the remaining egg (white), beaten slightly, and the vinegar. Place the bowl over a saucepan of simmering water (double boiler) and cook, stirring constantly, until the dressing thickens, about 5-7 minutes.
- 5Place the sautéed tomato slices on a hot platter. Pour the warm dressing over the tomatoes and serve immediately.
