Theobromine Griddle Cakes

A simple recipe for Theobromine Griddle Cakes, adapted from a vintage recipe. Theobromine is the main alkaloid found in cocoa and chocolate.

Ingredients

  • 1 cup All-purpose flour
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 40 grams Unsweetened cocoa powder (Approximately 1/3 cup)
  • 1 cup Milk
  • 1 Egg
  • 2 tablespoons Melted butter

Instructions

  1. 1In a large bowl, whisk together the flour, sugar, baking powder, salt, and cocoa powder.
  2. 2In a separate bowl, whisk together the milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  3. 3Heat a lightly oiled griddle or frying pan over medium heat. Pour 1/4 cup of batter onto the hot griddle for each griddle cake. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface.
  4. 4Serve the griddle cakes immediately with your favorite toppings, such as butter, syrup, or fresh fruit.
