A simple recipe for Theobromine Griddle Cakes, adapted from a vintage recipe. Theobromine is the main alkaloid found in cocoa and chocolate.
Ingredients
- 1 cup All-purpose flour
- 2 tablespoons Granulated sugar
- 1 teaspoon Baking powder
- 0.25 teaspoon Salt
- 40 grams Unsweetened cocoa powder (Approximately 1/3 cup)
- 1 cup Milk
- 1 Egg
- 2 tablespoons Melted butter
Instructions
- 1In a large bowl, whisk together the flour, sugar, baking powder, salt, and cocoa powder.
- 2In a separate bowl, whisk together the milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- 3Heat a lightly oiled griddle or frying pan over medium heat. Pour 1/4 cup of batter onto the hot griddle for each griddle cake. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface.
- 4Serve the griddle cakes immediately with your favorite toppings, such as butter, syrup, or fresh fruit.
