Strawberry Filling

A simple and delicious strawberry filling perfect for cakes, pastries, or as a topping.

Ingredients

  • 1 cup Heavy cream (Use cold heavy cream for best results.)
  • 0.33 cup Granulated sugar
  • 1 Egg white (Use a fresh egg white.)
  • 0.5 cup Fresh strawberries (Mashed or finely chopped.)
  • 0.5 teaspoon Vanilla extract

Instructions

  1. 1In a large bowl, beat the heavy cream with an electric mixer until stiff peaks form. This may take 3-5 minutes.
  2. 2In a separate clean, dry bowl, beat the egg white with an electric mixer until stiff peaks form. This may take 2-3 minutes.
  3. 3Gently fold in the sugar, beaten egg white, mashed strawberries, and vanilla extract into the whipped cream. Mix until just combined.
  4. 4For best results, chill the strawberry filling in the refrigerator for at least 30 minutes before using.
