Instructions
- 1If using raisins with seeds, remove them. Cut the raisins into smaller pieces.
- 2In a large bowl, melt the butter. Add the molasses, milk, and well-beaten egg. Mix until well combined.
- 3In a separate bowl, whisk together the flour, baking powder, and salt.
- 4Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- 5Fold in the prepared raisins.
- 6Grease a pudding mold or heat-safe bowl with butter.
- 7Pour the batter into the prepared mold, cover tightly with a lid or foil, and steam for 2 1/2 hours. To steam, place the mold in a large pot with enough water to come halfway up the sides of the mold. Keep the water simmering gently throughout the steaming process.
- 8While the pudding is steaming, prepare the wine sauce. In a saucepan, combine sugar, butter, and water. Bring to a simmer over medium heat, stirring until sugar is dissolved and butter is melted. Remove from heat and stir in the wine and nutmeg.
- 9Once the pudding is cooked, let it cool slightly before inverting it onto a serving plate. Serve warm with the wine sauce.
