Steamed Nutmeg Pudding

A classic steamed pudding flavored with nutmeg and cinnamon, served with a sweet sauce. Raisins and currants can be added for extra flavor.

Ingredients

  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Ground Nutmeg
  • 1.5 cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 0.25 teaspoon Salt
  • 0.5 cup Molasses
  • 0.5 cup Milk
  • 0.5 cup Shredded Suet (Vegetable shortening can be substituted)
  • 0.5 cup Raisins ((Optional))
  • 0.5 cup Currants ((Optional))
  • 1 tablespoon Butter (For greasing the mold)
  • Sterling Sauce (For serving (recipe follows))
  • 0.5 cup Butter (For Sterling Sauce)
  • 1 cup Granulated Sugar (For Sterling Sauce)
  • 0.5 cup Water (For Sterling Sauce)
  • 1 teaspoon Vanilla Extract (For Sterling Sauce)

Instructions

  1. 1In a large bowl, whisk together the flour, cinnamon, nutmeg, baking powder, and salt until well combined.
  2. 2In a separate bowl, combine the molasses and milk. Add the molasses mixture to the shredded suet (or vegetable shortening) and mix well.
  3. 3Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix. If using, fold in the raisins and currants.
  4. 4Grease a pudding mold (or heat-safe bowl) with butter. Pour the batter into the prepared mold, cover tightly with a lid or aluminum foil, and steam for 3 hours. Ensure the water level in the steamer remains constant throughout the steaming process.
  5. 5While the pudding is steaming, prepare the Sterling Sauce. In a saucepan, combine butter, sugar, and water. Bring to a boil, stirring until the sugar is dissolved and the sauce is smooth. Remove from heat and stir in vanilla extract.
  6. 6Once the pudding is steamed, carefully remove it from the mold. Serve warm with Sterling Sauce.
