Steamed Nutmeg Pudding
A classic steamed pudding flavored with nutmeg and cinnamon, served with a sweet sauce. Raisins and currants can be added for extra flavor.
Ingredients
- 1 teaspoon Ground Cinnamon
- 1 teaspoon Ground Nutmeg
- 1.5 cups All-Purpose Flour
- 1 teaspoon Baking Powder
- 0.25 teaspoon Salt
- 0.5 cup Molasses
- 0.5 cup Milk
- 0.5 cup Shredded Suet (Vegetable shortening can be substituted)
- 0.5 cup Raisins ((Optional))
- 0.5 cup Currants ((Optional))
- 1 tablespoon Butter (For greasing the mold)
- Sterling Sauce (For serving (recipe follows))
- 0.5 cup Butter (For Sterling Sauce)
- 1 cup Granulated Sugar (For Sterling Sauce)
- 0.5 cup Water (For Sterling Sauce)
- 1 teaspoon Vanilla Extract (For Sterling Sauce)
Instructions
- 1In a large bowl, whisk together the flour, cinnamon, nutmeg, baking powder, and salt until well combined.
- 2In a separate bowl, combine the molasses and milk. Add the molasses mixture to the shredded suet (or vegetable shortening) and mix well.
- 3Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix. If using, fold in the raisins and currants.
- 4Grease a pudding mold (or heat-safe bowl) with butter. Pour the batter into the prepared mold, cover tightly with a lid or aluminum foil, and steam for 3 hours. Ensure the water level in the steamer remains constant throughout the steaming process.
- 5While the pudding is steaming, prepare the Sterling Sauce. In a saucepan, combine butter, sugar, and water. Bring to a boil, stirring until the sugar is dissolved and the sauce is smooth. Remove from heat and stir in vanilla extract.
- 6Once the pudding is steamed, carefully remove it from the mold. Serve warm with Sterling Sauce.
