Steamed Date Pudding
A simple and delicious steamed date pudding, perfect for a comforting dessert. This recipe is egg-free and easy to make.
Ingredients
- 225 grams Dates, pitted and chopped (About ½ lb, stoned and cut in pieces)
- 120 grams All-purpose flour (About 1 cup)
- 1 teaspoon Baking powder
- 0.25 teaspoon Salt
- 60 grams Vegetable shortening (About ¼ cup, melted)
- 60 ml Molasses (About ¼ cup)
- 120 ml Milk (About ½ cup)
Instructions
- 1Pit and chop the dates into small pieces. Melt the vegetable shortening. Measure out all other ingredients.
- 2In a mixing bowl, whisk together the flour, baking powder, and salt.
- 3In a separate bowl, combine the melted shortening, molasses, and milk. Mix well.
- 4Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
- 5Fold in the chopped dates.
- 6Grease a one-pound baking-powder box or a similar sized heatproof bowl or mold. Pour the batter into the prepared container.
- 7Cover the container tightly with foil or a lid. Place the container in a steamer or a large pot with a few inches of boiling water. Make sure the water level is below the top of the container. Steam for 1 hour, or until a toothpick inserted into the center comes out clean. Check the water level periodically and add more boiling water if needed.
- 8Let the pudding cool slightly before serving. Serve warm with Wine Sauce (recipe not provided, but can be found online).
