A simple and delicious steamed date pudding, perfect for a comforting dessert. This recipe is egg-free and easy to make.

Ingredients

  • 225 grams Dates, pitted and chopped (About ½ lb, stoned and cut in pieces)
  • 120 grams All-purpose flour (About 1 cup)
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 60 grams Vegetable shortening (About ¼ cup, melted)
  • 60 ml Molasses (About ¼ cup)
  • 120 ml Milk (About ½ cup)

Instructions

  1. 1Pit and chop the dates into small pieces. Melt the vegetable shortening. Measure out all other ingredients.
  2. 2In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. 3In a separate bowl, combine the melted shortening, molasses, and milk. Mix well.
  4. 4Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  5. 5Fold in the chopped dates.
  6. 6Grease a one-pound baking-powder box or a similar sized heatproof bowl or mold. Pour the batter into the prepared container.
  7. 7Cover the container tightly with foil or a lid. Place the container in a steamer or a large pot with a few inches of boiling water. Make sure the water level is below the top of the container. Steam for 1 hour, or until a toothpick inserted into the center comes out clean. Check the water level periodically and add more boiling water if needed.
  8. 8Let the pudding cool slightly before serving. Serve warm with Wine Sauce (recipe not provided, but can be found online).
