Steamed Allspice Raisin Pudding
A simple steamed pudding flavored with allspice and raisins. This recipe modernizes an older recipe, providing clear instructions for a delicious dessert.
Ingredients
- 1 teaspoon Ground Allspice
- 1 teaspoon Ground Cinnamon
- 1.5 cups Raisins (Use seedless raisins)
- 2 tablespoons All-Purpose Flour (Plus extra for dusting)
- 0.5 cup Butter, softened
- 0.5 cup Granulated Sugar
- 2 Eggs
- 0.25 cup Milk
Instructions
- 1If using raisins with seeds, remove the seeds. Chop the raisins into smaller pieces. Dust the chopped raisins with 1 tablespoon of flour to prevent them from sinking to the bottom of the pudding during steaming.
- 2In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
- 3Beat in the eggs one at a time, then gradually stir in the milk.
- 4In a separate bowl, whisk together the allspice, cinnamon, and remaining flour. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- 5Gently fold in the floured raisins until evenly distributed throughout the batter.
- 6Grease a pudding basin or heat-safe bowl with butter. Pour the batter into the prepared basin.
- 7Cover the basin tightly with foil or parchment paper secured with string. Place the basin in a steamer over simmering water. Steam for 1.5 hours, or until a toothpick inserted into the center comes out clean. Replenish water as needed.
- 8Remove the pudding from the steamer and let it cool slightly before inverting it onto a serving plate. Serve warm or at room temperature.
