Stale Bread Griddle Cakes
A simple recipe for griddle cakes using stale bread crumbs, offering a unique texture and flavor.
Ingredients
- 1.5 cups Fine stale bread crumbs (Use finely ground bread crumbs for best results.)
- 1.5 cups Milk (Scalded)
- 2 tablespoons Butter (Unsalted)
- 2 Eggs (Large)
- 0.5 cup All-purpose flour
- 0.5 teaspoon Salt
- 4 teaspoons Baking powder
Instructions
- 1Scald the milk by heating it in a saucepan until it just begins to simmer. Add the butter to the milk and stir until melted. Pour the milk and butter mixture over the bread crumbs in a bowl. Let soak until the crumbs are soft, about 5 minutes.
- 2In a separate bowl, whisk together the flour, salt, and baking powder. In another bowl, beat the eggs well. Add the beaten eggs to the soaked bread crumb mixture. Then, add the flour mixture to the wet ingredients and stir until just combined. Do not overmix.
- 3Heat a lightly oiled griddle or frying pan over medium heat. Pour 1/4 cup of batter onto the hot griddle for each griddle cake. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface.
- 4Serve the griddle cakes immediately with your favorite toppings, such as butter, syrup, or fruit.
