Sponge Drops
Light and airy sponge drops, perfect for a delicate treat. These are simple to make and require minimal ingredients.
Ingredients
- 2 Eggs (Separated)
- 100 g Granulated Sugar
- 100 g All-Purpose Flour (Sifted)
- 2 tbsp Powdered Sugar (For dusting)
Instructions
- 1In a clean, dry bowl, beat the egg whites until stiff peaks form. Gradually add half of the granulated sugar while beating, until the meringue is glossy and holds its shape.
- 2In a separate bowl, whisk the egg yolks with the remaining granulated sugar until pale and slightly thickened.
- 3Gently fold the egg yolk mixture into the egg white meringue. Gradually sift in the flour and fold until just combined. Be careful not to overmix.
- 4Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. Drop spoonfuls of the batter onto the prepared baking sheet, leaving some space between each drop. Sprinkle with powdered sugar.
- 5Bake for 8 minutes, or until the edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
