Sponge Drops

Light and airy sponge drops, perfect for a delicate treat. These are simple to make and require minimal ingredients.

Ingredients

  • 2 Eggs (Separated)
  • 100 g Granulated Sugar
  • 100 g All-Purpose Flour (Sifted)
  • 2 tbsp Powdered Sugar (For dusting)

Instructions

  1. 1In a clean, dry bowl, beat the egg whites until stiff peaks form. Gradually add half of the granulated sugar while beating, until the meringue is glossy and holds its shape.
  2. 2In a separate bowl, whisk the egg yolks with the remaining granulated sugar until pale and slightly thickened.
  3. 3Gently fold the egg yolk mixture into the egg white meringue. Gradually sift in the flour and fold until just combined. Be careful not to overmix.
  4. 4Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. Drop spoonfuls of the batter onto the prepared baking sheet, leaving some space between each drop. Sprinkle with powdered sugar.
  5. 5Bake for 8 minutes, or until the edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
