Sparkling Wine Jelly
A simple and elegant sparkling wine jelly, perfect as a light dessert or palate cleanser. This recipe uses gelatin to create a firm but delicate texture.
Ingredients
- 2 tablespoons Unflavored Gelatin (About 1 standard packet)
- 0.5 cup Cold Water (For blooming the gelatin)
- 0.25 cup Granulated Sugar (Adjust to taste)
- 3 cups Sparkling Wine (Prosecco, Champagne, or Cava) (Use a dry or semi-dry variety)
- 1 tablespoon Lemon Juice (Freshly squeezed)
Instructions
- 1In a small bowl, sprinkle the gelatin over the cold water. Let it stand for 5-10 minutes until softened.
- 2In a saucepan, combine the sparkling wine and sugar. Heat over low heat, stirring until the sugar is dissolved. Do not boil.
- 3Remove the saucepan from the heat. Add the bloomed gelatin and stir until completely dissolved.
- 4Stir in the lemon juice.
- 5Pour the mixture into individual serving glasses or a mold. Refrigerate for at least 4 hours, or preferably overnight, until set.
