Sour Milk Griddle-cakes

Classic sour milk griddle-cakes, perfect for a simple and satisfying breakfast or brunch.

Ingredients

  • 2.5 cups All-purpose flour
  • 0.5 teaspoon Salt
  • 2 cups Sour milk (or buttermilk)
  • 1.25 teaspoons Baking soda
  • 1 Egg
  • 2 tablespoons Butter (For greasing the griddle)
  • 0.5 cup Maple syrup (For serving)

Instructions

  1. 1In a large bowl, whisk together the flour, salt, and baking soda until well combined.
  2. 2In a separate bowl, whisk the sour milk and egg until well combined. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix; a few lumps are okay.
  3. 3Heat a lightly greased griddle or frying pan over medium heat. Once hot, drop batter by spoonfuls (about 1/4 cup each) onto the griddle. Cook for 2-3 minutes per side, or until golden brown and cooked through. When bubbles start to form on the surface and the edges look set, flip the pancakes.
  4. 4Serve immediately with butter and maple syrup.
