Sour Milk Griddle-cakes
Classic sour milk griddle-cakes, perfect for a simple and satisfying breakfast or brunch.
Ingredients
- 2.5 cups All-purpose flour
- 0.5 teaspoon Salt
- 2 cups Sour milk (or buttermilk)
- 1.25 teaspoons Baking soda
- 1 Egg
- 2 tablespoons Butter (For greasing the griddle)
- 0.5 cup Maple syrup (For serving)
Instructions
- 1In a large bowl, whisk together the flour, salt, and baking soda until well combined.
- 2In a separate bowl, whisk the sour milk and egg until well combined. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix; a few lumps are okay.
- 3Heat a lightly greased griddle or frying pan over medium heat. Once hot, drop batter by spoonfuls (about 1/4 cup each) onto the griddle. Cook for 2-3 minutes per side, or until golden brown and cooked through. When bubbles start to form on the surface and the edges look set, flip the pancakes.
- 4Serve immediately with butter and maple syrup.
