Snowballs

A classic steamed pudding, perfect for serving with fruit preserves or sauces.

Ingredients

  • 0.5 cup Butter, softened
  • 1 cup Granulated sugar
  • 0.5 cup Milk
  • 2.25 cups All-purpose flour
  • 3.5 teaspoons Baking powder
  • 4 large Eggs, separated
  • 0 to serve Preserved fruit, quince marmalade, or strawberry sauce (For serving)

Instructions

  1. 1In a large bowl, cream together the softened butter and sugar until light and fluffy.
  2. 2In a separate bowl, whisk together the flour and baking powder.
  3. 3Gradually add the milk to the creamed butter and sugar, alternating with the dry ingredients, beginning and ending with the dry ingredients. Mix until just combined.
  4. 4In a clean, dry bowl, beat the egg whites until stiff peaks form.
  5. 5Gently fold the beaten egg whites into the batter until just combined. Be careful not to overmix.
  6. 6Grease six individual ramekins or heat-safe cups with butter. Fill each cup about two-thirds full with the batter. Steam for 35 minutes, or until a toothpick inserted into the center comes out clean.
  7. 7Serve warm with preserved fruit, quince marmalade, or strawberry sauce.
