Snow Pudding
A light and refreshing dessert made with gelatin and cold water. This modernized version provides clear instructions for a beginner.
Ingredients
- 1 tablespoon Unflavored Gelatin (Equivalent to ΒΌ box of gelatin)
- 0.25 cup Cold Water
- 0.5 cup Granulated Sugar (Adjust to taste)
- 2 tablespoons Lemon Juice (Freshly squeezed is best)
- 2 Egg Whites (From large eggs)
Instructions
- 1In a small bowl, sprinkle the gelatin over the cold water. Let it stand for 5 minutes to soften.
- 2Heat the softened gelatin in the microwave for 15-20 seconds, or over a double boiler, until completely dissolved. Do not boil.
- 3In a clean, dry bowl, beat the egg whites until stiff peaks form. Gradually add the sugar, beating until glossy and smooth.
- 4Slowly whisk the dissolved gelatin and lemon juice into the meringue. Pour into a mold or individual serving dishes. Refrigerate for at least 2 hours, or until set.
