Simple Vegetable Soup

A basic recipe for vegetable soup, utilizing various vegetables and simple techniques.

Ingredients

  • 6 cups Vegetable broth (Can substitute with water and bouillon cubes)
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 1 cup Onion, diced
  • 1 cup Potatoes, diced
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt (Or to taste)
  • 0.5 teaspoon Black pepper (Or to taste)
  • 1 leaf Bay leaf (Optional)

Instructions

  1. 1Heat olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery. Sauté until the onions are translucent and softened, about 5 minutes.
  2. 2Add the vegetable broth, diced potatoes, bay leaf (if using), salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the potatoes are tender.
  3. 3Remove the bay leaf before serving. Taste and adjust seasoning as needed. Serve hot.
