Simple Griddle Cakes
A basic recipe for griddle cakes (pancakes), modernized with clearer instructions and measurements.
Ingredients
- 1.5 cups Boiling Water
- 1.25 cups Milk
- 1 Egg
- 2 tablespoons Melted Butter
- 1.5 cups All-Purpose Flour
- 2 tablespoons Sugar
- 1 teaspoon Baking Powder
- 0.25 teaspoon Salt
Instructions
- 1In a mixing bowl, add the flour, sugar, baking powder, and salt. Whisk to combine. Add meal (flour mixture) to boiling water, and boil five minutes.
- 2Turn the mixture into a bowl. Add milk, then the egg (well beaten), and melted butter. Stir until just combined. Do not overmix.
- 3Heat a lightly oiled griddle or frying pan over medium heat. Pour 1/4 cup of batter onto the hot surface for each pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through. Cook same as other griddle-cakes.
- 4Serve immediately with your favorite toppings, such as maple syrup, fruit, or whipped cream.
