Ingredients

  • 0.5 lb Dates, pitted and chopped (About 225g)
  • 0.5 cup Butter, softened (About 115g)
  • 0.5 cup Granulated sugar (About 100g)
  • 2 Eggs
  • 1.5 cups All-purpose flour (About 180g)
  • 1 tsp Baking powder
  • 1 tsp Vanilla extract (Optional)

Instructions

  1. 1Preheat oven to 350°F (175°C). Grease and flour a cake pan (8-inch round or square recommended).
  2. 2In a large bowl, combine the softened butter and sugar. Beat together until light and fluffy (about 3 minutes).
  3. 3Beat in the eggs one at a time, then stir in the vanilla extract (if using).
  4. 4In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. 5Gently fold in the chopped dates until evenly distributed throughout the batter.
  6. 6Pour the batter into the prepared cake pan and spread evenly. Bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
