A simple and savory omelet made with stale bread crumbs, milk, and seasonings. This recipe modernizes a classic dish for a quick and satisfying meal.

Ingredients

  • 0.5 cup Stale bread crumbs (Use any type of bread, preferably a day or two old.)
  • 0.5 cup Milk (Whole milk recommended for richness.)
  • 2 Eggs (Large eggs)
  • 0.75 teaspoon Salt (Adjust to taste)
  • 0.125 teaspoon Black pepper (Freshly ground)
  • 1 tablespoon Butter (Unsalted)

Instructions

  1. 1In a bowl, soak the stale bread crumbs in milk for 15 minutes, or until softened.
  2. 2While the bread crumbs are soaking, separate the eggs. In a separate bowl, beat the egg yolks until light and frothy. In another clean bowl, whisk the egg whites until stiff peaks form.
  3. 3Add the beaten egg yolks, salt, and pepper to the soaked bread crumbs. Mix well to combine. Gently fold in the whisked egg whites until just combined. Be careful not to overmix.
  4. 4Melt the butter in a non-stick skillet over medium heat. Pour the egg mixture into the skillet and cook for 3-5 minutes, or until the bottom is set and lightly golden. Flip the omelet carefully and cook for another 2-3 minutes, or until cooked through. Alternatively, you can finish cooking the omelet under a broiler for a minute or two to set the top.
