Sauterne Jelly
A delicate and refreshing Sauterne wine jelly, perfect as a light dessert or palate cleanser.
Ingredients
- 2 tablespoons Unflavored Gelatin
- 0.5 cup Cold Water
- 1.5 cups Boiling Water
- 1.5 cups Sauterne Wine
- 3 tablespoons Lemon Juice
- 1 cup Granulated Sugar
- 2 drops Green Food Coloring (Or as needed to achieve desired color)
Instructions
- 1In a small bowl, sprinkle the gelatin over the cold water. Let it sit for 5 minutes to soften.
- 2In a larger bowl, pour the boiling water over the softened gelatin and stir until completely dissolved. This should take about 1-2 minutes.
- 3Stir in the Sauterne wine, lemon juice, and sugar until the sugar is completely dissolved.
- 4Add green food coloring, a drop or two at a time, until you reach the desired shade of green. Strain the mixture through a fine-mesh sieve into a shallow pan or dish to remove any undissolved gelatin or impurities.
- 5Cover the pan with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, until the jelly is firm and set.
- 6Once set, cut the jelly into 1-inch cubes and serve chilled.
