Royal Soup

A rich and creamy soup made with chicken, bread crumbs, and hard-boiled egg yolks.

Ingredients

  • 1 cup Stale bread crumbs
  • 0.5 cup Milk
  • 3 Hard-boiled egg yolks
  • 1 cup Cooked chicken breast meat (From a boiled chicken)
  • 0.5 tsp Salt (To taste)
  • 0.25 tsp Black pepper (To taste)
  • 1.5 cups Scalded milk
  • 3.5 cups White Stock III (See recipe below)
  • 2.5 tablespoons Butter
  • 2.5 tablespoons All-purpose flour

Instructions

  1. 1Soak the bread crumbs in milk until softened.
  2. 2Rub the hard-boiled egg yolks through a sieve. Rub the cooked chicken meat through a sieve.
  3. 3Add the sieved egg yolks and chicken to the soaked bread crumbs. Gradually add the scalded milk and chicken stock, seasoning highly with salt and pepper.
  4. 4In a separate saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, until a smooth paste (roux) forms.
  5. 5Gradually whisk the roux into the soup mixture until it thickens. Simmer gently for 10 minutes, stirring occasionally, to allow the flavors to meld.
  6. 6Season with additional salt and pepper to taste. Serve hot.
