Rich Chocolate Caramels

A simple recipe for making rich, homemade chocolate caramels.

Ingredients

  • 2 tablespoons Unsalted Butter
  • 0.5 cup Whole Milk
  • 0.5 cup Granulated Sugar
  • 1 cup Molasses
  • 4 ounces Semi-Sweet Chocolate (Use good quality chocolate for best results.)

Instructions

  1. 1Lightly grease an 8x8 inch baking pan with butter or line with parchment paper. This will prevent the caramels from sticking.
  2. 2In a medium saucepan, combine the butter, milk, sugar, and molasses.
  3. 3Cook over medium heat, stirring constantly, until the mixture reaches the firm-ball stage (245°F or 118°C on a candy thermometer). This will take approximately 20-25 minutes.
  4. 4Remove from heat and stir in the chocolate until melted and smooth.
  5. 5Pour the mixture into the prepared pan and let cool completely at room temperature. This will take at least 1-2 hours.
  6. 6Once cooled, cut the caramels into squares and wrap individually in wax paper, if desired. Store in an airtight container at room temperature.
