Rich Chocolate Caramels
A simple recipe for making rich, homemade chocolate caramels.
Ingredients
- 2 tablespoons Unsalted Butter
- 0.5 cup Whole Milk
- 0.5 cup Granulated Sugar
- 1 cup Molasses
- 4 ounces Semi-Sweet Chocolate (Use good quality chocolate for best results.)
Instructions
- 1Lightly grease an 8x8 inch baking pan with butter or line with parchment paper. This will prevent the caramels from sticking.
- 2In a medium saucepan, combine the butter, milk, sugar, and molasses.
- 3Cook over medium heat, stirring constantly, until the mixture reaches the firm-ball stage (245°F or 118°C on a candy thermometer). This will take approximately 20-25 minutes.
- 4Remove from heat and stir in the chocolate until melted and smooth.
- 5Pour the mixture into the prepared pan and let cool completely at room temperature. This will take at least 1-2 hours.
- 6Once cooled, cut the caramels into squares and wrap individually in wax paper, if desired. Store in an airtight container at room temperature.
