Quince Honey

A simple quince preserve with a honey-like consistency, perfect for spreading on toast or using as a topping.

Ingredients

  • 3 large Quinces (Peeled and grated)
  • 1 cup Water
  • 2.5 cups Sugar (About half the original amount, adjusted for modern tastes)

Instructions

  1. 1Peel, core, and grate the quinces using a box grater or food processor.
  2. 2In a medium saucepan, bring the water to a boil over medium-high heat. Add the sugar and stir constantly until the sugar is completely dissolved. This will create a simple syrup.
  3. 3Add the grated quince to the boiling syrup. Reduce heat to medium and cook, stirring occasionally to prevent sticking, for 20-30 minutes, or until the quince is translucent and the mixture has thickened to the consistency of honey. The color should deepen to a golden amber.
  4. 4Carefully pour the hot quince honey into sterilized jars or heat-safe containers. Let cool completely before sealing. The honey will thicken further as it cools. Store in the refrigerator.
