Prune Gelatin Dessert

A classic prune gelatin dessert, updated for modern kitchens. This recipe features softened prunes in a lemon-flavored gelatin, perfect for a light and refreshing treat.

Ingredients

  • 0.5 cup Cold water (For soaking gelatin)
  • 2.5 tablespoons Unflavored gelatin (Or 1/2 box of gelatin)
  • 1 cup Granulated sugar
  • 0.25 cup Lemon juice (Freshly squeezed is best)
  • 1 cup Pitted prunes (About 1/2 pound)
  • 2 cups Cold water (For soaking and cooking prunes)
  • to make 2 cups Boiling water (Added to prune water)
  • to taste Sugar (For serving)
  • to taste Heavy cream (For serving)

Instructions

  1. 1Pick over, wash, and soak prunes in 2 cups of cold water for at least 2 hours, or preferably overnight.
  2. 2Cook the prunes in the same water they soaked in until they are soft. This should take about 20-30 minutes.
  3. 3Remove prunes from the water. Pit the prunes and cut them into quarters.
  4. 4To the prune water, add enough boiling water to make 2 cups of liquid.
  5. 5Soak the gelatin in 1/2 cup of cold water for 5 minutes.
  6. 6Dissolve the soaked gelatin in the hot prune liquid. Stir until completely dissolved.
  7. 7Add the sugar and lemon juice to the gelatin mixture. Stir until the sugar is dissolved.
  8. 8Strain the mixture through a fine-mesh sieve to remove any undissolved gelatin. Add the quartered prunes to the strained liquid.
  9. 9Pour the mixture into a mold or individual serving dishes. Chill in the refrigerator for at least 4 hours, or until set.
  10. 10Stir twice while cooling to prevent prunes from settling. Serve chilled with sugar and cream, if desired.
