Prune Almond Filling
A sweet and nutty filling made with prunes, almonds, and White Mountain Cream. Perfect for cakes, pastries, or as a topping.
Ingredients
- 2 cups Milk
- 0.75 cup Granulated Sugar
- 2 Egg Whites
- 1 teaspoon Vanilla Extract
- 0.5 cup Pitted Prunes (Selected, stoned, and cut into pieces)
- 0.3333333333333333 cup Almonds (Blanched and chopped)
Instructions
- 1In a saucepan, combine milk and sugar. Heat over medium heat, stirring occasionally, until the sugar is dissolved. Do not boil.
- 2In a clean, dry bowl, whisk the egg whites until stiff peaks form.
- 3Gently fold the whisked egg whites into the warm milk mixture. Stir in the vanilla extract.
- 4Return the mixture to the saucepan and cook over low heat, stirring constantly, until the cream thickens slightly. This should take about 5-8 minutes. Be careful not to let it boil.
- 5Remove the White Mountain Cream from the heat and stir in the chopped prunes and almonds.
- 6Let the filling cool completely before using. Store in an airtight container in the refrigerator.
