Oyster Force-meat
A savory oyster force-meat, perfect for stuffing or as a flavorful spread.
Ingredients
- 1 cup Fish Force-meat (Prepared according to your favorite recipe)
- 0.25 Small onion (Finely chopped)
- 0.5 tablespoon Butter
- 0.33 cup Oysters (Soft, finely chopped)
- 0.33 cup Thick White Sauce (Prepared according to recipe below)
- 0.25 teaspoon Salt (To taste)
- 0.125 teaspoon Cayenne pepper (To taste)
- 1 teaspoon Parsley (Finely chopped)
- 2 tablespoons Butter (For white sauce)
- 2 tablespoons All-purpose flour (For white sauce)
- 1 cup Milk (For white sauce)
- 0.25 teaspoon Salt (For white sauce)
- 0.125 teaspoon White pepper (For white sauce)
Instructions
- 1Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute, stirring constantly. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, and cook until thickened, about 3-5 minutes. Season with salt and white pepper. Set aside.
- 2In a skillet, melt butter over medium heat. Add the finely chopped onion and sauté for 5 minutes, or until softened and translucent.
- 3In a bowl, combine the fish force-meat, sautéed onion, chopped oysters, and thick white sauce. Season with salt, cayenne pepper, and chopped parsley. Mix well to combine.
- 4Serve immediately as a stuffing, spread, or appetizer. Can be chilled and served cold as well.
