One Egg Muffins II
Simple and quick muffins, perfect for breakfast or a snack. This recipe is modernized with the addition of fruit, inspired by the 'Cereal with Fruit' recipe.
Ingredients
- 2 cups All-purpose flour
- 4 teaspoons Baking powder
- 0.5 teaspoon Salt
- 2 tablespoons Granulated sugar
- 1 cup Milk
- 2 tablespoons Melted butter
- 1 Egg
- 0.5 cup Fresh fruit (berries, chopped apple, banana) (Inspired by 'Cereal with Fruit' recipe)
Instructions
- 1Preheat oven to 400°F (200°C). Grease or line a 6-cup muffin tin.
- 2In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- 3In a separate bowl, whisk together the milk, melted butter, and egg.
- 4Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- 5Gently fold in the fresh fruit.
- 6Fill each muffin cup about 2/3 full.
- 7Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- 8Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
