One Egg Muffins II

Simple and quick muffins, perfect for breakfast or a snack. This recipe is modernized with the addition of fruit, inspired by the 'Cereal with Fruit' recipe.

Ingredients

  • 2 cups All-purpose flour
  • 4 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 2 tablespoons Granulated sugar
  • 1 cup Milk
  • 2 tablespoons Melted butter
  • 1 Egg
  • 0.5 cup Fresh fruit (berries, chopped apple, banana) (Inspired by 'Cereal with Fruit' recipe)

Instructions

  1. 1Preheat oven to 400°F (200°C). Grease or line a 6-cup muffin tin.
  2. 2In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. 3In a separate bowl, whisk together the milk, melted butter, and egg.
  4. 4Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. 5Gently fold in the fresh fruit.
  6. 6Fill each muffin cup about 2/3 full.
  7. 7Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. 8Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
